About the Recipe
My kids love banana bread so I've tried many different variations and recipes until I finally combined a few that we loved and made it my own. This recipe is always a crowd favorite and my kids cannot get enough!
Ingredients
• 1 cup white sugar
• ½ cup butter, softened
• 2 eggs
• 1 teaspoon vanilla extract
• 1 teaspoon fresh lemon juice
• 1 teaspoon cinnamon
• ¼ teaspoon nutmeg
• 1 ¾ cups all-purpose flour
• 1 teaspoon baking soda
• 1 teaspoon baking powder
• ½ teaspoon salt
• ½ cup sour cream
• ½ cup chopped walnuts
• 1 cup of smashed bananas
• Optional: ½ cup mini chocolate chips
Preparation
Preheat your oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan or line it with parchment paper.
In a stand mixer, cream together the sugar and softened butter. Add the eggs, lemon juice, and vanilla, and mix until well combined.
In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Gradually add this dry mixture to the stand mixer, mixing well after each addition.
Stir in the mashed bananas, sour cream, walnuts, and chocolate chips (if desired) until everything is evenly incorporated.
Transfer the batter to the prepared loaf pan and smooth the top. Bake in the preheated oven for about 1 hour, or until a toothpick inserted into the center comes out clean.
Allow the loaf to cool in the pan for 10 minutes, then carefully invert it onto a wire rack to cool completely.
